According to Excalibur’s R&D Manager, Certified Food Scientist & Chemist Tyler Shepke, bacon flavor trends have staying power.

“We are seeing many bacon products with maple and hickory smoke flavors,” Shepke says. “However, there is also a trend towards using alternative sugar sources that impart subtle differences in taste and caramelization when cooked. Unique smoked and charred flavors that are not traditionally used are also being incorporated with bacon.”

Hot Honey Beer Rub is the latest flavor innovation crafted by Excalibur’s R&D team. It combines cane and brown sugar for a touch of sweetness, and is enhanced by beer flavor that delivers a delightful bite. A mild kick from red pepper adds warmth, while a hint of clove rounds out the finish.
